We handle various ages of colored and white cheddar cheese ranging from current to 10-years-old.  We offer 40-lb blocks, 640-lb totes, as well as 500-lb barrels.  Cheddar is our specialty, but we also offer many other variety of cheese.


Third-generation Wisconsin cheesemaker, Bill Novak, founded Novak’s Cheese in February 2006.  With continued growth of the company Bill’s son, Ben, joined his father and is involved in the sales and purcashing with Bill.  Both Bill and Ben are Licensed Wisconsin Cheese Graders.

Bill Novak got his start in the cheese industry when he was still in high school, working alongside his father, Bill Novak Sr., at the former Hebel's Corners Cheese Factory in Denmark, Wis., which now is a production facility for BelGioioso Cheese Inc. Novak graduated from the UW-Platteville with a degree in ag business and worked as a supervisor and manager for Safeway Stores Inc. for 13 years in the company's natural cheese and process cheese production divisions.  Novak then worked in cheese procurement for Great Lakes Cheese, DCI Cheese Co. and Kineva Foods before deciding to go out on his own.
